
Jerusalem Artichokes (Helianthus tuberosus) Blooming
The sun is out and strong. Both the one in the sky and all the brilliant sunchokes and sunflowers down the ground that follow their sky Goddess with their faces every day.
Sunchokes are a great pig food. Properly grazed the pigs move through eating some of the tubers, the heads, the leaves and all of the stalks. The leave behind broken bits of tuber in the soil which then sprout the following year.
I would advise you to not plant Jerusalem Artichokes in a place you can’t control them as they are highly invasive. I like that in a fodder.

Could you please elaborate on this? At what stage of growth do you let the pigs eat the whole plant, but avoid them killing it before the tubers are done? Fall, at the end of flowering? I’d suppose to stalks were too fibrous, but your pigs seems to eat most anything…
Fall. I prefer after flowering is done, seeds are setting. Tubers are well grown. Stalks are their least favorite part but they do eat a lot, 90%?, of them.
