Today I received the official letter from the USDA verifying for federal inspection at our on-farm butcher shop assigning us our Establishment Number and Frontline Supervisor.

    Wish we lived closer to eat your products.
    Grew up in Murfreesboro, TN where we always slaughtered 7-9 hogs after the second hard freeze at my grandparents farm.
    Here in Texas, I harvest a lot of feral hogs at night.
    Excellent lean meat but unfortunately must ALWAYS be cooked well done due to critters that hogs carry internally.
    However well done does not mean dried out just no pink pork tenderloin.
    Keep up your good work and your dream!!!
